The task is to find out what is essential when preparing and storing food, write down 10 good kitchen rules, and be part of practising them in your kitchen.

Introduction:
Our environments are full of bacteria. They are everywhere. Looking at one square-centimetre of skin on your hand for example, there are 100,000 bacteria. They are so small that our eyes cannot see them, but looking into big microscopes, we can.<br /> <br /> Many of the bacteria do a lot of good work to make life function better, such as breaking down dead plants so new nutrients are brought to the soil.<br /> <br /> Other, very useful bacteria, work inside our bodies. Our intestines are full of good bacteria, which help to break down the food we eat into nutrients that can be absorbed by our cells, thus making our bodies strong and healthy. These types of bacteria co-exist with the environment and our bodies, they support the natural process of life.<br /> <br /> But there are also other types of bacteria, that do not cooperate with our bodies, but that make us sick, the bad bacteria. They can be spread if the hygienic standard is too low in a kitchen, or if infected flies crawl on the food, to mention a few common ways how they are spread. For a person to get sick from food, the bacteria need to get into your mouth, and they have to be swallowed. The result is usually diarrhoea or stomach cramps.<br /> <br /> To avoid this, hygienic kitchen rules need to be practised!<br /> <br /> In big kitchens, like a kitchen for a boarding-school, more people will suffer if hygiene standards are not met. Therefore the kitchen rules have to be known by everybody, and practised 100%, also by volunteers who are assisting with kitchen chores at different times.<br /> <br /> Also in the kitchens of homes, everyone there would benefit if each one knew what bacteria are, how they are spread, and how to prevent the bad ones from getting into our mouths. Just a simple thing like washing all vegetables, that are to be eaten raw, in clean water with some bleach added can prevent much diarrhoea.<br /> <br /> Basic good practises in hygiene for preparation and storing of food go a long way for keeping people healthy!

<ol> <li> <p>Read the introduction, and the files and take notes.</p> </li> <li> <p>Consider and write down at least 10 rules for having a high hygienic standard for preparing and storing food.</p> </li> <li> <p>Consider which of these apply to the kitchen at your work place and / or at home. Write down what applies, and what does not, and why the rules are suggested.</p> </li> <li> <p>Present this to some people working in the kitchen(s), and discuss with them if something needs to be improved.</p> </li> <li> <p>Write down the rules you have suggested, why you have suggested them, and a short resume of your discussion with the persons working in the kitchens and what changes you agreed about. Send to your tutor for possible comments.</p> </li> </ol>
